Pumpkin Spice Cake Mix Cookies

Do you love pumpkin spice? 

Even if you're not usually a fan, don't overlook this post just yet. You might be pleasantly surprised, as was the case with me.
 
I have to admit that I am not one that is excited when all things pumpkin spice start arriving during the first signs of Fall. Pumpkin pie is not even on my radar during the holidays. I know, right, what is wrong with me?
 
Well, when I first saw this recipe for Pumpkin Spice Cookies, I almost passed it by, but I am SO glad that I didn't. They are delicious!  If you enjoy moist and creamy baked goods, this is the one to try. It's simple to make, yet offers a fantastic flavor. These cookies are now at the top of my favorites list--and maybe yours too. Give it a try and see!

Ingredients

Cookies

  • 1 box spice cake mix (I used Duncan Hines brand)
  • 2 eggs
  • 1/3 cup pure pumpkin puree
  • 1/2 teaspoon pure vanilla extract


Cream Cheese Frosting

  • 8 ounces full-fat cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon, divided

 

Instructions

  1. Preheat oven to 350°F.
  2. In large mixing bowl, combine cake mix, eggs, pumpkin puree, and vanilla. Mix well with a fork (or you could use a hand or stand mixer).
  3. Create heaping 1 tablespoon cookie dough balls with a cookie scoop or spoon and place them about 2 inches apart on a baking sheet that has been line with parchment paper. The dough will be wet and sticky.
  4. Gently pat down the cookie dough balls. They do not have to be perfectly round.
  5. Bake 9-10 minutes.
  6. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  7. While the cookies cool, make the frosting.
  8. Use a hand mixer, beat cream cheese and butter together on low in a medium-sized mixing bowl until there are no clumps.
  9. Add powdered sugar, vanilla, and 1/4 teaspoon cinnamon and beat well.
  10. Spoon frosting onto cookies and sprinkle with remaining cinnamon (optional).
  11. Cookies can be stored in an air-tight container in the fridge or freezer to extend shelf life. If stored at room temperature, they will need to be eaten immediately due to the cream cheese frosting.
