Red Velvet Crinkle Cookies for Christmas

Red Velvet Crinkle Cookies

Have you ever had a cookie that brings back memories of joy and celebration? For my daughter, that cookie is the one she always requests for her birthday, which conveniently falls just a week before Christmas. This cookie has been her favorite for years, and even though she has graduated college and moved away, I still make them for her as a special surprise.

What Makes This Cookie So Special?

There's something about the combination of flavors and textures in this cookie that makes it truly irresistible. It's a perfect blend of chewiness and crunchiness, with just the right amount of sweetness. The secret ingredient? Love. Yes, it sounds cheesy, but it's true. These cookies are made with love, and that's what makes them so special.

How Can You Make These Cookies?

Now, you may be wondering how you can recreate this magical cookie in your own kitchen. Well, I'm here to share the recipe with you. It's a simple recipe that requires just a few basic ingredients, but the result is pure perfection.

Here's what you'll need:

  • 1 box red velvet cake mix (I prefer Duncan Hines)
  • 2 tablespoons all-purpose flour
  • 2 large eggs
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • Powdered sugar, for rolling the cookies

(Cookie cutters optional if you want to cut into shapes)

  1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
  2. In a large bowl, combine cake mix and flour. Whisk until clumps disappear. In the bowl of a stand mixer, mix together cake mix, flour, eggs, oil and vanilla extract. Mix until smooth. Take about 1 tablespoon of cookie dough and form into a ball. (Tip: If the dough is too sticky to use your fingers for rolling, using two plastic spoons works great.) Roll the ball in powdered sugar until fully coated. Place cookie dough balls on prepared baking sheet. Bake for 10 minutes, or until edges are set and cookies begin to crack.
  3. Let cookies sit on baking sheet for 2 minutes. If desired, cut cookies into shapes with cookie cutter. (Eat the cookie scraps :) Transfer cookies to a wire cooling rack and cool completely.

A Sweet Surprise for Your Loved Ones
